I have a problem, I don’t understand in 50 RZ DPSK we use 2 LiNb MZ Modulation while in NRZ DPSK we use only one LiNb MZ Modulation. So why and when we use two MZ modulation and one MZ modulation

They are two different modulator formats, in the first the second MZ is used to carve the optical power, but really the information is encoded into the phase. In the second pulses are not carved because it is NRZ.
Agree with Damian, first modulator is used to record data obtained from infromation source, then to change code of bit stream to RZ. NRZ doesn’t require this code change.
