Could anyone help me please to simulate all optical NOT gate using Optisystem?

In the Component library under Default/Signal processing library/Arithmetic/Optical/ there is the optical gain component. You can change the gain to -1 to act as an optical not. This may solve your problem.

You may use the electrical NOT component to the electrical signal first then modulate the laser. However, there are all optical schemes that can be used to create optical logic gates using nonlinear effects. Below is a good reference.

I also also understand that Mr Adnan is asking about how to design logic gates using nonlinear effects. The answer of Sir Ahmad is appropriate. For instance, an all-optical inverter is easily can be implemented using XGM in SOA. A lot of literature can be found easily using digital libraries.
